WHERE WE BEGAN

2021

The beginning of Pistami.
A clear focus from the start.

Good pistachios.
Strong relationships.
Care in every detail.

Pistami began operating in 2021 with a simple ambition: to connect businesses with high-quality pistachios through a closer relationship with the people who grow them. That connection remains at the heart of how we work.

We source directly from growers and bring that understanding of the crop into our own sorting and selected packing activities. It gives us a practical role in preparing the product, as well as in helping customers choose it.

Our range is focused on two categories: in-shell pistachios and kernels. For wholesalers, roasters, retailers and food manufacturers, we help turn a broad requirement into a clear choice of variety, size, colour grade, preparation and packing.

DIRECT SOURCING

Relationships
rooted at the source.

We buy directly from pistachio growers. Speaking with the people closest to the crop helps us understand the variety, harvest and condition of the product before it becomes part of a commercial order.

Our aim is a dependable relationship on both sides: growers who understand the quality we seek, and customers whose requirements are translated into a clear product specification.

  • Direct communication with the growers behind the crop
  • Selection around variety, appearance and intended use
  • Samples and specifications that make comparisons practical
  • A focused range for trade and food production

CROP KNOWLEDGE / HARVEST & FRESHNESS

Freshness starts
with the crop.

Our direct relationships with growers keep the crop at the centre of the conversation. Harvest timing, careful handling and storage all influence the condition of the pistachio.

Crop year, packing date and storage history help us select the right lot for your delivery schedule.

OUR RANGE / SIZE & GRADE

The right size.
The right specification.

Choose by variety, size and preparation for in-shell pistachios, or by type, colour and application for kernels.

Naturally split in-shell pistachios

IN-SHELL PISTACHIOS

Count per ounce.

One ounce ≈ 28.35 g

Counts such as 18/20 or 28/30 describe the number of nuts per ounce. Within this system, a lower count means larger nuts.

PISTACHIO KERNELS

Type, colour & sample.

Green Peeled · Kaal · Normal

For Green Peeled kernels, discuss whole-kernel colour grades S / A / B / C / D. For Kaal and Normal kernels, define the appearance and preparation against a sample.

A reference sample helps you choose the colour and appearance your application needs.

OUR OPERATIONS / SORTING & CONSISTENCY

Technology with
a clear purpose.

We use up-to-date sorting technology in our own operations to prepare pistachios around the characteristics buyers need. Technology supports consistency; product assessment defines what a suitable batch should look like.

QUALITY CONTROL / LABORATORY TESTING

Good quality
stands up to scrutiny.

Appearance is one part of quality. Our approach also considers freshness, physical condition and the testing requirements of the order.

WHAT TO REVIEW FOR YOUR ORDER

Six areas of quality assessment
01

Aflatoxin analysis

Aflatoxin B1 and total aflatoxins—B1, B2, G1 and G2—are key considerations for pistachios. Results need to be assessed against the requirements for the destination and intended use.

What to specify: sample identity, method, reporting limits and the applicable acceptance limits.
02

Microbiological checks

Salmonella is a relevant hazard for pistachios, including products used as ingredients. Testing requirements should reflect processing, handling and the intended use of the product.

What to specify: organisms, sample quantity, method and acceptance criteria under the agreed plan.
03

Moisture & water activity

Moisture content and water activity measure different characteristics. Where specified, both help assess the product alongside its preparation, packaging and storage conditions.

What to specify: the measurement, test conditions and product-specific limits.
04

Residues & other contaminants

Pesticide residue testing and other contaminant checks, such as metals where relevant, are defined around product risk and destination requirements.

What to specify: the required testing panel and the current limits for the receiving market.
05

Physical & sensory quality

Colour, size, shell or kernel condition, aroma and texture all matter. These checks help assess consistency and signs of deterioration against the agreed product and reference sample.

Product assessment complements laboratory analysis; the two serve different purposes.
06

Results in context

A useful laboratory report identifies what was sampled, what was tested and which method was used. Findings should be reviewed against the specification and linked to the relevant lot.

Ask for the analysis and supporting documents relevant to your order.

A clear testing plan for your order.

Your quotation brings the sample, specification, testing scope and documents together in one place. This gives your team a clear reference from product selection to delivery.

BUYING WITH CLARITY / DOCUMENTS & ORDER

Know the requirements.

Product identity, lot references and supporting documents keep purchasing and quality teams working from the same information.

BEFORE WE WORK TOGETHER

A few useful
answers.

Do you buy directly from growers?

Yes. Direct purchasing and relationships with pistachio growers are central to our sourcing approach. We began operating in 2021 and continue to build the business around understanding the crop and the buyer’s requirements.

Do you carry out your own sorting and packing?

We carry out our own sorting using up-to-date technology and handle selected packing activities ourselves, from wholesale bags to vacuum-packed cartons.

Can we agree a sample and specification first?

Yes. Tell us the product, application, quantity and destination. Add the required size or grade, preparation, packing and documents. The sample and specification provide a reference for agreeing the order.

Which products do you supply?

Our catalogue has two categories: in-shell pistachios and kernels. Explore individual varieties such as Fandoghi, Kalleh Ghouchi, Ahmad Aghaei, Akbari and Badami, or compare Green Peeled, Kaal and Normal kernels.

Can I specify a fresh-crop order?

Yes. Include the requested crop year, product, quantity and delivery date in your enquiry. The available lot, packing date and remaining shelf life are confirmed with the quotation.

Does a lower size count mean a larger pistachio?

Yes, when comparing counts per ounce. An 18/20 count contains fewer, larger nuts per ounce than a 28/30 count. Compare the variety and preparation as well as the count.

Are colour-grade letters universal?

No. Grade names and letters can vary by supplier. Use the reference sample, agreed appearance and product specification to make a meaningful comparison.

Which laboratory tests should we discuss?

Discuss aflatoxin B1 and total aflatoxins, relevant microbiological checks, moisture, water activity and destination-specific residues or contaminants. The product, intended use and receiving market determine the scope and acceptance criteria.

What are the linked laboratory resources?

They are reading resources on food testing and laboratory competence. See the testing scope and laboratory details in your quotation.

Which pack weights can I discuss?

25 kg and 50 kg bags, 1 MT (1,000 kg) big bags and vacuum inner packs in cartons. The suitable format is confirmed around the product and order. Vacuum inner-pack and carton weights are agreed separately.

Can I specify packing and labelling details?

Yes. Include your preferred pack format, weights, liner or vacuum requirements, label information and pallet or handling needs in the enquiry. We will confirm the feasible arrangement in the quotation.

Do you deliver beyond Türkiye?

Yes. We arrange delivery in Türkiye and anywhere in Europe. Share your destination and receiving requirements so the route, delivery terms and timing can be discussed for your order.

What are the lead time and delivery cost?

These depend on the selected product, availability, quantity, packing and destination. Request a quotation with your required delivery date; the confirmed timing and commercial terms will be specific to that order.
